I got into a Betty Crocker mode today. Actually it's been something I've wanted to do all week - since we picked apples and I was trying to figure out what to do with the bag my mom gave me. I made apple crisp for Brian and Chad yesterday. Actually I cooked the whole meal while the boys worked outside on Chad's house.
Anyways, I wanted to make some kind of jam or jelly with the apples. A google search revealed nothing but I did find an easy peach jam recipe that I altered to make 'peach-apple jam'. It turned out pretty darn tasty but now I have two huge containers of jam. I plan on bringing some into work tomorrow and of course I'll take some over to Chad's and back to my parents next week.
For those who are curious. Here was the recipe I altered.
3 cups finely chopped ripe peaches
1 cup finely chopped apples (I used Jonathans)
Mix apple and peaches and mash with a potato masher (recipe said you could use blender but that seemed like too much work. I like chunks of fruit!) Pour into big saucepan and 2 Tablespoons of lemon juice and a packet/box of Sure Jell. Mix and bring mixture to a boil. Once it reaches a nice boil, add 5 cups of sugar. Bring to a boil, stirring consistantly. Boil for about a minute and then remove from heat. Occasionaly stir as the mixture cools down. Remove film from the top of mixture. Once cooled, pour into container and refridgerate.
